Easy & QUICK Canned Fruit Lunchbox Muffins!


This recipe is hands down my go-to quick 5 min prep muffin recipe when I need an addition to the lunch box items or a quick plate to take to events.

No butter and with just 1/2cup of Sugar makes this a winner for me! Add in the fact that I can get a bit of fruit into my children, albeit from a can, is another bonus!

Makes 9

Pre-heat over to 180C (350F)

Line muffin tray with liners (recipe makes 9, you could double recipe to make more, or use in mini cupcake tray).

In a bowl add:
1.5c Self Raising Flour
1/2 c White Sugar
1/4 Canola or Soy Oil
2/3 Milk (I use 1% trim)
1 egg whisked quickly with a fork

Mix to combine then stir thru

1/2 cup of canned fruit!  (I use canned blueberries or canned diced apple) but the possibilities are endless. Pear, Peach, Boysenberries....  Add white chocolate chips for an added treat should you wish!  If I'm using canned berries, I drain the juice off first prior to adding, then I'm careful to 'fold' it into the mixture so as not to wind up with purple muffins!

Bake for 20min.

That easy.

  2. I'm a novice cook and wondering when you say mix to combine and then stir through, what does that mean exactly? Mix with an electric mixer then stir with a spoon? Thanks in advance :)
